love Cabernet
Sauvignon. The Cabernet fruit produced by the growing season
of 2004 will be on their list of the “treasures”
of the wine cellar. Lockwood Vineyard manager warned his winemaker
that this Cabernet was going to be “something special”.
Winemaking brought the fruit in with tender handling and the
vintage showed its caliber very early in the cellar.
2004 was the last in a series of dry winters,
and the vigor of the grapevines was controlled by the irrigation
team.
Near perfect weather patterns for flowering fruit and set,
held the potential for very high quality fruit development.
As the season progressed, the vine canopy was
controlled with irrigation to provide optimum sunlight exposure
to the fruit. Wine flavor development is always a function
of the fine balance of sunshine
and protective shading of the fruit in the canopy. With this,
the vineyard created “something special”.
The 2004 Cabernet Sauvignon shows rich
varietal fruit, in a full-bodied framework. Aromas of pomegranate
and black cherry are in tune for a luscious mouthful of Cabernet.
Medium tannins and a toasty finish make this wine an ideal
pairing for a steak or dish boasting a hearty sauce. We raise
